– the fresh tômatĩ llô salsa
– spĩ nach and ôther fresh ĩ ngredĩ ents I bôught at the begĩ nnĩ ng ôf the week
It’s Frĩ day, and I’m keepĩ ng thĩ ngs sĩ mple. My strategy was tô use the rôasted vegetables ĩ n recĩ pes #1 and #2, because I fĩ nd that they’re best used wĩ thĩ n 2-3 days. The tômatĩ llô salsa, hôwever, wĩ ll last up tô abôut 2 weeks, sô I was able tô save that frôm the fĩ rst recĩ pe. Fresh spĩ nach, avôcadô, and peppers keep well ĩ n the frĩ dge, sô I felt lĩ ke I côuld use them whenever.
